Chef Maietta has always felt most at home in the kitchen. Cooking is a multigenerational talent he inherited from his family, who already found success in the San Francisco restaurant scene.
Although Chef Maietta initially went to college to study commerce, the birth of his daughter, Olivia, eventually led him to make use of his natural gifts and pursue a career as a chef. He knew this was a demanding path, especially as a single parent, but providing for his “North Star” was all the motivation he needed.
With determination and passion, he graduated from the Institute of Culinary Education in New York City with a degree in culinary arts. Through their program, he was lucky enough to meet his mentor, Chef Luis Bollo of Ibiza Restaurant and Meigas Restaurant. He credits Chef Bollo's guidance and advice as the foundation of his success.
Throughout his career, Chef Maietta has worked in fine restaurants of the likes of Salinas, Meigas, Ibiza, Blue Hills at Stone Barns, and Soho House New York. He has also made several media appearances, including Michael Colameco’s “Real Food,” ABC News Connecticut, and News 12 Connecticut.
